Rice Cracker & Dipping Sauce

Rice Cracker and Dipping Sauce

This menu is Thai snake. You can prepare the Rice Cracker by yourself or buy it at the supermarket. For the dipping sauce is sweet and sour.

Ingredients

  • 200 g Rice cracker
  • 250 ml. of coconut milk
  • 2 tbs of dried shrimp
  • 3 - 4 tbs of tamarind juice (tamarind concentrate + water)
  • 100 g of pork chopped
  • 1 tbs of shallot chopped
  • 1 coriander root
  • 3 tbs of ground peanut
  • 1 ts of garlic chopped
  • 1/2 ts of pepper
  • 3 tbs of vegetable oil
  • 3 - 5 tbs of sugar
  • 2 - 3 tbs of fish sauce


Rice Cracker :

  • You can use cooked rice or sticky rice ( I used sticky rice) to prepare them. You have to mold and press the rice as the cycle ( around 3 inch). And keep it dry around 1 day. 
  • Heat vegetable oil in the wok, use high-medium heat.
  • Drop a piece of them into the wok (a few at a time), until golden brown, drain well and Place into a dish.

Dipping sauce :

  1. Crush the dried shrimp, coriander root, garlic, and pepper into the mortar.
  2. Heat the vegetable oil then add the shallot slice in the pan when it bring out the good aroma add the pork chopped and ingredients from No.1, stir fry around 1 minute.
  3. Add the ground peanut and coconut milk. Stir as quickly then seasoning with fish sauce, tamarind juice, sugar. Checking test for sweet and sour.

 

Put the coriander leaves and chili slice on top

I got a question. After dry the rice, how we brown the rice. So it shows in brown color.
